Kitchari is the quintessential Ayurvedic healing food. It is beneficial to all doshas. Soft and gentle on the gut, it is warming, calming, cleansing and moistening. Soaked lentils and brown rice are cooked low and slow with ghee, chicken broth, spices and vegetables.
Combining legumes with grains creates a complete protein and soaking for 24 hours before cooking allows for better absorption and digestion.
This dish is traditionally given to people who are recovering from illness, to help cleanse the body of toxins and mostly importantly for new mothers; to reignite the digestive fire.
